Let's see. My take on the various additions to the harem, in the order that I would like to see them.

Ginny. Would have been my first choice, then Tonks, but I can see why you chose the order you did. I can also see Molly trying to keep her away from Harry, now that it is known that he is a Master Dom. By force if necessary. Either that, or Molly will bring her around intentionally, knowing that her daughter is a Sub. Maybe the reason behind Molly's prudishness has been an effort to keep Ginny from making the same mistake that Tonks made (not remaining a virgin). Molly is a Dom, so she would know what her daughter's future man would want. I also see Ginny a bit of a masochist. Not into humiliation or anything, just gets off on pain. Maybe a sideline of her having been raped in the Chamber by Tom.

Gabrielle. Young hot Veela slut. OH, Yeah! Sirius-ly, I've always liked Gabrielle as a Harry match, Veela nature aside. I guess I just like the Knight-in-shining-armour-who-saves-the-girl theme. Ginny in the Chamber, Gabby in the lake... I can see her either as another Complete Sub, or as a Sub-in-name-only because her Veela nature (or prevailing laws) requires that she be bound to someone. She has very little personality in cannon, so you could do as you wished. I kinda think her with a true Dominant nature, with predjudicial laws that require her to be bound into subservience due to her race, would be a really fun combo. She would be Sub to Harry, and would learn to enjoy it somewhat, as Harry would support her in whatever she wanted to become, even if that was Mistress of his harem, second only to him.

Luna. A serious Subbie, partially realized at a young age, but not bound, which explains her odd behavior, as you said that insanity was the result of an unbound sub. Fully Recognized by her Dom, Neville, but he died before he could bind her and she slipped even further into insanity. If Harry finds her and binds her, she may regain ALL her sanity, leaving her not Loony at all anymore.

Hermione. I have always thought, from Book 1, that Hermy was a serious unrealized subbie. Her (subconscious) Nature wants to be totally controlled, hence her ongoing love affair with rules and authority. Her conscious mind, raised to loathe slavery in all its forms by a Western Muggle education and liberal parents, rejects this entirely, and she ends up at war with her own nature. S.P.E.W and her rant against house elf slavery are aspects of her fighting her own submissive nature, in denial and refusing to admit to wanting to be a slave. She can eventually make peace with herself, accept that freesom is not for everyone and that House elves may have a racial Submissive nature, and restrict her adoration of authority to just her Master. She still is a fanatic about following the rules; she just follows Harry's rules now. I think she would either resist the Call to Serve for a long time, or the Call will pull her in immediately, and force her to be bound right then. If she resists once in the bond, Harry would let her have what she says she wants, but she will have to watch as the other girls are getting the domination that she truly craves, and she'll eventually cave.

Fleur. While she could be in the same boat as Gabby, somehow I just don't see it. Fleur would be a sub if I were writing it.

The Patils. Exquisitely beautiful, exotic, erotic twins, raised in a society that accepts polygamy, and expects women to be subservient to their men, and to learn how to please them physically. The same society that produced the Kama Sutra. 'Nuff said.

Lavender. Ummm. No.

Daphne. The Ice Queen/Princess of Slytherin. Just the title reminds me of a character in another story, who got the same nickname, for much the same reason. The story is named "The Favor", and is on asstr.org under the author name of MWTB, and has been the basis for my view of Daphne since I started reading Fanfic. I see Daphne as a girl who realizes that she is a serious submissive and masochist in her first year, and is stuck in a House where, if she were to let it out, she would instantly find herself as a sex toy for Draco and gang, and anyone else he felt like impressing, including the Dork Lard. She's smart enough to want more from her life, and knows that if it ever got out, her life would effectively be over. So she refuses everyone, and gets the Ice Bitch rep, hoping for someone she can trust to be her Master. Enter Harry, stage left. Again, 'nuff said.

Anyway, really just letting my fingers babble. Feel free to borrow any ideas you like, or not. Won't bother me none either way.
