Well we all know how Hermione worships Dumbledore, even more so than Harry in canon. His devotion to the Greater Good and his willingness to do anything to promote it, or at least his version of it, would make it quite easy for Hermione to justify altering her parents memories and uprooting their entire lives for what she envisions as "their own good".
