  Well, it's quite the interesting start and methinks that Dumbledore will very much come to regret this move (I suspect he's trying to strengthen/improve his "tool" with this but the "law of unintended consequences" will not be denied).
  
  As for Hermione, I could see her rather broken state allowing her to take on certain aspects of a Dementor, but I don't necessarily see that as the most likely; rather I can see her wanting revenge on those who did this to her. I rather like valkyrei!Hermione, with or without the chain-mail bikini (frankly, those have always struck me as impractical and unlikely, though easy on the eyes in most cases). Heh, if you want to make it more interesting, you could take inspiration from David Weber's "Path of the Fury" (or it's expanded version, "In Fury Born") and have one of the Greek furies bond with her while she's temporarily out of her mind. The result could be a truly credible partner for the "upgraded" Harry that's going to be coming out of this (I'd wager that magical ash will combine with him in "unexpected" ways and Dumbledore's efforts will yield a powerful tool, but not for Dumbledore to wield but which will rather wield itself).

  Cool beans! Really like how you dealt with Harry's part.
  I think you actually should do Riddik!Hermione, just not bald. The glowy eyes would be from being stuck in a cell with no light, plus maybe some extra ad-on/trauma magic to make it happen. Or maybe not glowy eyes, just her pupils get huge or slit like a cat's.
  For the personality, after she comes out of her shock coma she's going be a pretty new person, perhaps even more animal-like as her more intellectual side couldn't handle the stress so the Id took over for a bit and when she comes back to her self the Id has more control.

  I see both Hermione and Harry coming back as very bloodthirsty. Compassion will have be burned out of both of them. But I feel it might be amusing to see Hermione not as the clever, cunning, 'smartest witch of her generation' but instead as a 'kill first, ask questions never' barbarian warrior. Less of a "take over the whole thing" and more of a "bring the whole thing crashing down around everyone" revenge.

  This is an absolutely amazing idea. The God of War cross is great, I really like the idea of a Kratos version of Harry. It looks like he will be entirely unforgiving when it comes to protecting what he sees as his.
  
  As for Hermione I like the idea of the Valkyrie of your three but I agree with Cateagle with the idea of one of the furies, it fits really well with the God of War idea. I look forward to seeing what happens with this.

  I'd like to see Hermione with the ability to float and fly, chill all hope from a person and with her glowing eyes scare people almost to death. While wearing nothing but her long bushy hair - long enough to drape around her like a short robe. Combined with a fanatical belief/trust/love in her Harry.
  
  For Harry I see him losing the lode stones attached to his manacles; broken off they could be his favorite weapons, but attached to cumbersome, especially when used a s a flail.

  The screwed up thing is, I could see this happening given how sheeplike the wizarding world seems. Still though, you'd think that with the magical world still answering to the queen, something would end up being done about the attacks on muggles eventually, and there wouldn't be a magical world left to destroy by the time the muggles got done, especially with Muggleborns being persecuted, and probably deciding to retaliate.

  Hermione with float/fly ability and the Dementor chill and other dementor abilities.
  Harry can keep the chains. Perfect weapon (like Whiplash from Marvel).
  Hermione becomes dependent of her love for Harry and responds/trusts only him.
  Harry becomes ever more protective of Hermione/loves her.
  
  Would be neat
